Ingredients:
1 can coconut milk
1 can chickpeas
2 Tbsp coconut oil
1-2 limes
1 tbsp fresh ginger, grated
1 onion
1 bunch fresh parsley, finely chopped
1.5 cup snow peas
1 large sweet potato, cubed
3 cloves garlic, minced
1 tbsp curry powder
1 tsp salt
1 tsp garam masala
1 tsp cumin
1 tsp cracked black pepper
1 tsp chili powder
cayenne to taste
Directions:
In a pan, add coconut oil, garlic, sweet potatoes, and onions. Sautee until sweet potatoes are nearly soft.
Add coconut milk, spices, fresh ginger, chickpeas, and snow peas. Let simmer until vegetables are tender. Zest the entire lime and squeeze juice and add into the sauce.
Serve with rice
