Ingredients:
1 Tablespoon Olive Oil
2 cans black beans (drained)
2 cups broth (vegetable or chicken recommended)
1 large carrot, diced
1 medium onion, diced
3 minced garlic cloves
Spices to taste : salt, black pepper, cumin (2 teaspoons), chili powder (1 teaspoon), red pepper flakes(1/8 teaspoon)
(Can of green chiles optional)
Topping suggestions: cubed avocado, salsa, sour cream, shredded cheese, diced bell pepper, cilantro, tortilla chips, hot sauce, lime juice, crumbled chorizo
Great for kids with a side of cheese quesadilla for dunking!
Directions
Sauté carrots, onion, celery, garlic and chiles (if you are using them) in olive oil over low-medium heat until onions are translucent
Add spices and continue cooking one minute
Add broth and beans
Continue to cook, stirring frequently
Blend half the soup in a traditional blender and return to pot
Serve with suggested toppings
