Black Bean Soup

Ingredients:

1 Tablespoon Olive Oil

2 cans black beans (drained)

2 cups broth (vegetable or chicken recommended)

1 large carrot, diced

1 medium onion, diced

3 minced garlic cloves

Spices to taste : salt, black pepper, cumin (2 teaspoons), chili powder (1 teaspoon), red pepper flakes(1/8 teaspoon)

(Can of green chiles optional)

Topping suggestions: cubed avocado, salsa, sour cream, shredded cheese, diced bell pepper, cilantro, tortilla chips, hot sauce, lime juice, crumbled chorizo 

Great for kids with a side of cheese quesadilla for dunking!

Directions

  1. Sauté carrots, onion, celery, garlic and chiles (if you are using them) in olive oil over low-medium heat until onions are translucent

  2. Add spices and continue cooking one minute

  3. Add broth and beans

  4. Continue to cook, stirring frequently

  5. Blend half the soup in a traditional blender and return to pot

  6. Serve with suggested toppings
