April’s Harvest of the Month is… Arugula!
Arugula is a great source of phytonutrients that help reduce inflammation, along with isothiocyanates and glucosinolates which can help reduce the risk of cancer. It is also a good source of Vitamin K which is critical for proper blood clotting.
Arugula is a fairly strong flavored green that tastes peppery and spicy. It can be consumed raw and is best served with mixed greens. Arugula can easily be added on top of pizzas, tossed with fresh pasta, or pureed in soups.
Nourish’s Harvest of the Month is an initiative that focuses on seasonally relevant foods that can be sourced locally in Wisconsin. Nourish operates its nutrition programming and education on a three-year rotation of these crops, featuring one crop a month. Because of its spicy smell and taste, arugula is often planted strategically throughout the garden to minimize pest damage, a practice known as companion planting.
