April’s Harvest of the Month is… Spinach!

Spinach is rich in vitamins like folate, niacin, vitamin A, vitamin B6, vitamin C and traces of other essential vitamins. Thiamine and riboflavin, which are used in various reactions in our body, are also found in spinach. Spinach is rich in pigments like beta-carotene, lutein, xanthene, and chlorophyllin which help improve eyesight, reduce risk of cataracts, and prevent macular degeneration.

Nourish’s Harvest of the Month is an initiative that focuses on seasonally relevant foods that can be sourced locally in Wisconsin. Nourish operates its nutrition programming and education on a three-year rotation of these crops, featuring one crop a month. Did You Know?

Spinach can be harvested a few times throughout its lifecycle. When harvesting, cut about two inches above ground, in a few weeks the plant will produce more leaves that can be harvested!
