Februrar’s Harvest of the Month is… Legumes! Bonus - it’s National Chili Month!

The most commonly consumed type of legumes are beans, but the family also includes peas and lentils. Legumes can be consumed in 3 different stages of growth (green, shelled, or dried) and are a great source of folate and antioxidants.

 
 

Nourish’s Harvest of the Month is an initiative that focuses on seasonally relevant foods that can be sourced locally in Wisconsin. Nourish operates its nutrition programming and education on a three-year rotation of these crops, featuring one crop a month. We will share awesome recipes as well as some interesting educational pieces that you can share with others.

Legumes can use nitrogen in the soil that other plants cannot, making them a beneficial crop to use in rotational planting, a sustainability practice that helps keep soil fertile for a longer period of time.
