Elaine Jumes is a licensed Food for Life Instructor through the Physicians Committee for Responsible Medicine (PCRM), dedicated to helping her community combat diet-related health issues through evidence-based nutrition education and cooking demonstrations. In Sheboygan County, where chronic diseases like obesity and diabetes are rising, Elaine empowers individuals with tools to prevent, improve, and even—in some cases—reverse these conditions through diet and lifestyle.
As founder of Farsighted Foodie LLC and creator of KIND Cooking (Kind-hearted, Inviting, Nutritious, and Doable), Elaine blends over 25 years of plant-based living with her professional training to make healthy eating approachable, practical, and enjoyable. She holds additional certifications in Plant-Based Nutrition, Wellness Counseling, and Food & Sustainability from eCornell, and is an Integrative Nutrition Health Coach.
Based on the Physicians Committee’s successful 21-Day Vegan Kickstart book, this introductory class guides participants on a journey toward healthy weight loss, healthy weight maintenance, and an overall healthful and sustainable diet. For some, this may be the first time food choice is prioritized over restricting food amounts. Learn about delicious plant-based recipes that help to lower cholesterol, control diabetes, lower blood pressure, and even boost energy and mood. This cooking demonstration focuses on the Power-of the Plate -- empowering participants to make easy and affordable healthy meals at home.
